SWEET POTATO BREAKFAST BROWNIES
These brownies are easy to make, deceptively healthy, and intensely satisfying.
Ingredients:
- 2 cups puréed cooked sweet potatoes (peel before cooking)
- 1 cup nut or seed butter of your choice (I use sunflower, but almond is also excellent)
- 2 Tbsp. coconut oil, melted
- 1 scoop vanilla protein powder of choice (optional)
- 1 tsp. vanilla extract
- ½ cup + 1 Tbsp. unsweetened cocoa powder (I use raw cocoa powder)
- 3 Tbsp. maple syrup (or monk fruit-based maple sweetener, or 30-40 drops of liquid stevia, to taste).
- 1/8 tsp. salt
Method:
Preheat oven to 350F and line a loaf tin or small cake pan with parchment paper, or grease with coconut oil.
Steam sweet potatoes, let cool slightly, then purée in a food processor or blender. Blend in remaining ingredients. Taste and adjust with small additions of additional cocoa powder or sweetener, as needed.
Scrape batter into prepared tin or pan. Bake for 30-40 minutes, or until cooked through.
